As is tradition in the Veneto, some of the grapes are air-dried for up to 40 days, and the wine is aged at least 3 years in French oak. This gregarious wine greets you with ripe plum and black cherry preserves, flowers and a melange of spices, like nutmeg, cinnamon, clove and allspice. Elegant and long in the finish.
We'd pair Kairos with grilled red meats, wild boar stew, venison, or even a beefy ragù tossed with pasta.
