Rondinella Bianca 60%, Gold Traminer 15%, Kerner 15%, Incrocio Manzoni 10%
This is a unique wine, made with a "white" version of the normally "black" Rondinella grape, which developed on Zyme's property (hence the "from black to white"). It's partnered with more aromatic local varieties of Northern Italy, and is given 6 months of integration with the fine lees; this makes for a delicately aromatic wine reminiscent of the region's springtime meadows and fruits from the ochards that lie amongst mountain foothills. Serve in a balloon glass at 52-54F.
