The Zárate winery has been producing albariños since the early eighteenth, which makes it one of the historic wineries in this region. Zárate El Palomar is a single variety of Albariño from vines planted in one of the oldest estates documented in the Rias Baixas. The vines are 150 years old and planted on very shallow granitic soil. The roots, in search of food, penetrate the rock, giving the wine a very special mineral character. Bodega Zárate use environmentally friendly techniques, without the use of herbicides. The harvest is done manually and grape selection takes place in the vineyard. Once destemmed, the grapes are lightly pressed. Zárate El Palomar is fermented in French oak barrels of 2,200 litres over eight years. The liquid remains with its residue until after malolactic fermentation, which develops naturally. Once completed, it is racked and remains in contact with its lees for three months until bottling. Zárate El Palomar spends 2 months in the bottle before going to market.
