History,
When Woody Creek Distillers was founded, their mission was simple: to pour everything they had into everything they made. They set out to make nothing but the finest craft spirits, each with a unique taste and character that was true to the origins of that spirit. It’s a standard they continue to hold themselves to every day. Neutral grain spirits are never used - nor do they blend with base spirits from other distillers. The distillery grows and harvests many of their own ingredients, such as the rye in the 100% rye mash whiskey. For the finishing touch, they distill every spirit they make in custom CARL stills – a shining copper example of engineering and art that turns the Earth’s freshest ingredients into the world’s most treasured spirits. Mash for this expression is 70% Corn, 15% rye and 15% barley.
Tasting Notes,
Nose: Oranges and sweet toffee,vanilla, Cinnamon and clove along with honeyed vanilla and a slight, dark cherry, peanut brittle.
Palate: Honeyed toffee sweetness. A little bit of fruit shows up next. Orange cloves and apple cinnamon all together. Fruity spices lend some weight in the mouth.Choclate, oak, black The chocolate note doesn’t show up with it either. Just a nice weighty malt note that holds with it a bit of the spice. Upon the first swallow that cinnamon spice kicks up a notch but all it does is make my mouth water even more. Oak tannins from the new American oak come through on the finish with black pepper and more vanilla. This holds on for a decently long time and is quite nice. The hint of peanut from the nose only starts to show a bit after swallowing and letting the finish brood for a bit. It’s a nice added touch that again I didn’t find much of at all at the lower abv.
