History,
Westland Colere is a new addition to the Westland portfolio and is part of the newly announced Outpost Range. This lineup features whiskeys which highlight a central raw ingredient in single malt production with an emphasis on terroir. Colere, which is Latin for "to cultivate," puts its focus on the barley. In this case, the brand uses Alba, a six-row winter barley, in its production. Additionally, the brand intentionally uses only used casks here. Second-fill Independent Stave Company Cooper's Reserve barrels are used for 62% of maturation and first-fill ex-bourbon barrels are used for the remainder. Bottled at 50% ABV, this is an expected annual series
Tasting Notes,
Nose: Milk chocolate and fudge lead on the nose along with crème brûlée
Palate: offers rich, dark brown sugar, waxy honey, roasted peanuts and tannic oak, along with pineapple upside down cake.
Finish: It showcases bitter coffee grounds, molasses, toast, barrel char, and burnt caramel
