Criollo cocoa, a high-quality bean prized for its intense aromatics and lack of bitter astringency, is considered the first heirloom variety of cacao fruit and accounts for less than 3% of the world’s cocoa production. Inspired by historical preparations by the Olmec, Aztec, and Mayan people, this rare cocoa is combined with spices and chilis to create a piquant and confectionary amaro. Drink it neat, on the rocks, with soda, in coffee, or in cocktails such as an Old Fashioned or Negroni.
