There's something about Cabernet Sauvignon that resonates with wine drinkers… whether you favor the famed Bordeaux blends from France, Super Tuscan blends from Italy, beloved Napa iterations (see the cover feature!) or, increasingly of late, the great versions coming out of Paso Robles, people love their Cabs. Our wine buyers were unanimous in their praise of TreeSky's 2021 Cab and knew it would fit perfectly as our December Wine. And they were right!
Produced and bottled at Kaleidos Wine, TreeSky is owner/winemaker/winegrower Steve Martell's homage to his grandmother, who found beauty in unexpected places-- like how the bare, leafless winter trees stand out in silhouette against the luminous winter sky. It also pays tribute to hard work and community, two things Martell found working in Paso Robles and Santa Rita Hills wineries. He took it further in 2004 when he purchased 24 beautiful acres in westside Paso, parked his Airstream, rolled up his sleeves and got to work.
The nose on TreeSky is filled with bright, jammy fruits tempered with notes of briar, pie crust and a touch of mineral. The blackberry, black raspberry and dark cherry scents carry over to the palate which is balanced by silky tannins and light acidity. A touch of mocha and brown spices support the bright fruits while the body keeps it harmoniously whole. This is lovely Cab! Enjoy solo or with a variety of foods from cheese plates and charcuterie to burgers, steak tacos, prime rib sliders, hearty stews or chili. Holiday foods? You bet! This is as versatile as it is delicious.
The fruit for this wine is hand-harvested at peak ripeness for optimal wine flavor. The fruit is gently destemed into small open top fermenters. The berries are allowed to cold soak for 4 days before fermentation starts with native yeast. Once the fermentation begins the cap is gently punched down by hand or the juice is "pumped over" using gravity. The fermentation lasted 12 days, and the wine was aged in 40% new French oak for 18 months. The care in the winery, like the care in the vineyards, shows in the resultant wine and we imbibers benefit greatly because of it! Great Cab at a great price.
