The flagship red from Thymiopoulos, comes their best vineyards, from 40-year-old vines. Fermentation with indigenous yeasts takes place in stainless steel, and the wine then ages in large French oak barrels.
This bright, vibrant wine is ruby/garnet in color with a violet rim. On the nose, is wild blackberry, pomegranate, sour cherry, a hint of pesto and vanilla; as delicate garden herbs frolic the background. The body is medium-light, juicy, and savory with an elegant, medium acidity. This is an earthy wine, think Nebbiolo. The finish is long and lean, with salty notes and a dash of black pepper.
