The Three Foxes is a small-scale winery set up in 2004 by three young South African friends. The focus is to make small parcels of outstanding wine from grapes sources from the most exciting vineyards around the Cape.
From a shallow rocky vineyard on the east facing slopes of the Voor-Paardeberg. The soils are ancient decomposed granite gravels. This rugged rocky outcrop is on the boarder of the Paarl and Swartland regions. The clusters are hand-picked, mostly de-stemmed but a small component left whole cluster. As with all The Three Foxes wines, the wine is fermented using solely wild yeast. The wine stays on the skins for around three weeks for slow gentle extraction. It is then transferred to older 600L French oak Puncheons for 18 months maturation. A natural malo occurs and the wine is eventually bottles unfined and unfiltered. This wine typically shows concentrated bramble fruits with a dense, juicy mid-palate and fresh acidity to keep the wines power and richness nicely in check. The whole cluster component gives lifted aromatics, ground spice notes and freshness. This is a full bodied wine, with lovely definition and layered complexities from the soils and wild yeast ferment.
