The Irishman Single Malt Irish Whiskey was conceived and blended by Bernard Walsh. This is a triple-distilled single malt that is aged for at least 10 years in both bourbon casks and Oloroso Sherry casks—which are then specially selected by Bernard Walsh, blended and bottled in a limited small batch of 1000 cases. The aromas show honey, straw, cake, white flowers, cream, vanilla, caramel, treacle and grains stewed with persimmon, plum, quince and creamy citrus. The flavors follow in a superbly refreshing, tasty and delectable mouth-feel that build to include cocoa, coconut oil, taffy and nuts. The finish lingers to demonstrate toffee, toasted nuts, fruit, caramel and spice in a sumptuous, oily fade. This is balanced, excellent whiskey that is a joy to drink neat, with clean water or even with an ice cube... but definitely with time to enjoy.
