"Stop the presses!" That's what we said when we tried this brilliant new Daiginjo sake from Tenbi that shines like a diamond! It was love at first sip, and we knew we had to include this in our Newsletter. This sake is light, dry, clean, and seamless on the palate, with a beautiful brightness. Notes of fresh pear and honeydew melon dance in the background. The texture is viscous, and so strikingly pure and plush with a lengthy finish. Tenbi Junmai Daiginjo is made of 100% Yamada Nishiki rice, polished down to 40% of its original rice grain. It is also undiluted (genshu), with a 15% ABV.
Tenbi was established in 2020 in Shimonoseki, Yamaguchi after taking over an old sake brewery which had ceased operations for over 15 years. A local company took over and constructed a new one with the goal of producing exceptional and modern sake to boost the community's economy. Their motto, "a tiny difference makes a big difference," reflects their attention to detail, from micromanagement to micro-biology, and their unwavering commitment to achieving perfection. This is a Sake that will dazzle and impress.
