PREFECTURE: Hyogo
RICE VARIETY: Shinriki
RICE POLISHING RATIO: 65% (35% of the rice grain is shaved-off)
Tatsuriki uses the Ibo River's clean, mineral-laden water to cultivate the rice, and the pure river stream is also used in making this luscious sake. The Ibo River flows and supplies the nutrients that allow oysters to thrive in the Harima Nada Sea. The oyster production in this coastal zone on the outskirts of Hyogo is famous for their quality and flavor. To go with these renowned oysters, Honda Shoten has produced this special sake. The flavors are rounded out by the delicate sweetness and banana scent and reminiscent of a Kabinett Riesling. In addition, the lovely acid that is unique to Shinriki sake rice leaves a cool, clean aftertaste.
