Many consider St. George Spirits the true pioneers of the American Craft Distillers movement. They have been producing hand crafted spirits of the highest quality in their airplane hangar-turned distillery for over 30 years! With such a wide range of spirits in their catalogue it would only make sense to finally incorporate a gin. But just any old London dry gin would be too simple so, they made three distinct juniper-laden offerings that run a full dynamic range of this herbaceous and botanically driven spirit.
Next up in the line is Botanivore, their self-proclaimed "botanical eater." Using a whopping 19 different botanicals, this gin is herbaceous, fresh, and elegant. St. George keeps no secrets to their recipes as they proudly boast them all: angelica root, bay laurel, bergamot peel, black peppercorn, caraway, cardamom, cilantro, cinnamon, citra hops, coriander, dill seed, fennel seed, ginger, juniper berries, lemon peel, lime peel, orris root, Seville orange peel, & star anise! The juniper berries, fresh cilantro & bay laurel are placed in the botanical basket for vapor-distilled integration. The remaining 16 botanicals are steeped over-night in their 1500 liter copper pot still. This is a wonderfully complex yet approachable gin. It is fresh, light, floral, and earthy with bright citrus and spice to boot. Try this with some indian tonic for the best gin and tonic ever.
