From the Dominican Republic, Ron Atlantico starts as a variety of different rums; one rum is distilled from fresh sugar cane juice, while another rum is distilled from molasses and the third is an aguardiente —basically a rum distilled to lower alcohol proof to retain more characteristics of the sugar it was distilled from. These 3 different rums are aged and blended in a complicated Solera system to achieve the specific Ron Atlantico taste profile as they conjoin and coalesce; the final product is a combination of rums 15 to 25 years old. The nose shows cola berry, tea, damp fresh-cut wood, fig, mincemeat, plum, moist dates, allspice in sugar, vanilla and caramels with sea salt. The flavors brilliantly emerge as predicted by the nosing and resolve to tea, stewed peaches, apricot, clove, cinnamon and nutmeg mixed in with maple and honey. The finish shifts from these nuanced niceties to creamy opulence for a lingering finale. This rum is impeccable, try it neat, on ice or in a spirit forward cocktail.
