Aged rhum agricole produced by Rhum J.M in Macouba, Martinique Distilled from sugarcane juice; sugarcane is grown on the J.M estate and surrounding farms located near the distillery Sugarcane is crushed within one hour of harvest and open fermented with French baker’s yeast for 24 hours Distilled on a Creole copper column still Aged 12–14 months on-site at the Fonds-Préville distillery in heavily charred ex-bourbon barrels The evocative nose recalls grilled apricots in syrup, wood char and wet earth, and toasted marshmallow that has fallen into a campfire. A palate of crushed chili flakes and fresh orange peel finishes with lime oil and an inkling of candy wax; fall spent at a campfire in the woods comes to Martinique. 49% ABV A bold but balanced proof brings smokey and earthy characteristics into sharp relief in J.M’s sultry Fumée Volcanique (Volcanic Smoke).
