The plums are harvested from the Reisetbauer family farm’s grove of 2,000 plum trees in September when the fruit is fully ripe and starting to dry out to ensure maximum concentration of sugars and flavor. The fruit is chopped, the pits carefully removed, and the mash is fermented at 19 °C (66 °F) for 14 days before being distilled twice in a Christian Carl copper pot still and rested for 3 years in stainless steel. It takes 10 kg (over 22 lbs) of plums to produce just one liter of this vibrant eau-de-vie that captures a full spectrum of plum aromas and flavors from nose to finish—fresh plum, candied plum, and plum skin—along with lemongrass, hints of angelica root, and orange blossom. 41.5% ABV.
