Ripe cherries are harvested in June then mashed and immediately placed in stainless steel for a 12-day fermentation at 19 °Celsius (66 °F). It takes 10.5 kg (over 23 lbs) of fresh cherries to make one liter of this eau-de-vie that is distilled twice in a Christian Carl copper pot still and rested for three years in stainless steel.
