For SOLE, PUNI’s classic three malt blend is matured in both first-fill, ex-bourbon casks from the US and Pedro Ximénez sherry casks from Spain. Sole translates to “sun” in Italian and refers to two crucial stages in sherry making—the drying of the grapes to concentrate their sweetness and the solera blending process.
Tasting Notes
Distilled from a combination of barley, wheat, and rye (all malted), aged for two years in ex-bourbon barrels and an additional two years in Pedro Ximenez sherry butts, the nose on the PUNI SOLE radiates bright citrus and warm vanilla while the palate is layered with soft oak and wild honey. It’s a pleasing Highland-style malt, albeit from the Italian Highlands rather than the Scottish! Non-chill filtered with no added coloring.
