From the late maestro mezcalero Patricio Hernández
100% Agave salmiana
Cooked in a masonry oven using steam
Combined with mosto (agave must)—the remains from harvested pulque
Milled using traditional stone tahona
Fermented in pine with 30% pulque (fermented agave sap) and wild yeast
Distilled twice using a hybrid wood & copper pot still
Bell peppers and fresh leather on the nose are bolstered on the palate by the creamy lactic notes for which Salmiana is famous, and a racy edge the that reminds us it was distilled using sharp, light pulque. The finish brings us cracked peppercorns wrapped in cool, clean linen and a hint of pine. Spectacular.
