Nc’nean Quiet Rebels Amy The Nc'Nean Quiet Rebels series celebrates the team behind the organic Scotch distillery, and this edition honours Amy Stammers, head of sustainability. A portion of this single malt was matured in Maury wine casks. Maury is a fortified French wine produced in a similar way to Port, and these casks were sourced from a winery that employs a variety of sustainable farming methods and biodynamic farming principles, such as agroforestry which involves planting trees among the vines to improve soil richness, and following the lunar calendar for planting and harvesting. Combined with Nc'Nean's signature STR red wine and bourbon cask matured spirit, the Maury casks bring plenty of jammy damson, dark fruit, and earthy walnut character to the table.
