Moreau-Naudet Chablis comes from vineyards located in the towns of Préhy and Courgis, in southern Chablis (Burgundy). These vines are 20-30 years old and cultivated according to ecological principles and with a limited yield of around 35 hl / ha. When the grapes are fully ripe, they are harvested manually.
In the winery, the Moreau-Naudet Chablis grapes are meticulously selected. They are then gently pressed for 4 hours and the resulting must ferments with native yeasts. Finally it remains on its lees to develop excellent texture, depth and quality.
Salty, like licking a shell on the beach. Lemon oil, jasmine, peony and flint. A perfect mate to a big block of hard cheese.
