This delightful ruby colored petillant (sparkling) wine from Lebanon's Bekaa Valley was made in the Ancestral Method: unfined, unfiltered, left on the lees for months then disgorged. It is composed of 80% Sangiovese and 20% Merwah. (Merwah is a rare light-skinned white wine grape variety native to the mountains of Lebanon.) This very easy to drink bubbly displays good fruit and a clean, crisp dry finish. Serve with appetizers, fish, chicken, quiche and pasta carbonara.
