Manoir de Grandouet ‘2 Year Fine’ Calvados is made with the apple varieties of Frequin Rouge, Bisquet, Bouteille, Fagotier, Mettais, Domaine, Noel des Champs, and Moulin à Vent. After fermention that renders the cider completely dry, it is distilled twice in a small pot still in a rustic barn on the property. The new spirit then goes into a 15-year-old, 5,000-liter foudre. The calvados is reduced twice in 200-liter oak casks before reaching its bottling strength of 45% ABV.
Tasting Notes,
A nose of freshly cut green apple, baker’s yeast, and vanilla bean leads to a spicy palate of fresh apple skin and a lingering note of white flowers
