Cooked in conical earthen pit oven using pine and mesquite wood
Milled using traditional horse-drawn stone tahona
Fermented in Encino oak vats (tinas) using proprietary well water
Distilled twice using traditional copper pot stills
Soft mandarin and clementine citrus dances with bright green mossy notes and a vague sense of fresh spring water on the nose; the palate is an explosion of tropical fruit, white chocolate, red currants, and toffee. Decadent and yet refreshing; absolutely stellar.

This is a one-off batch of maguey Blanco, a rare subspecies of Agave americana. The largest documented variety of agave growing in Mexico, the harvested heart (piña) alone can range from 1300–1600 pounds. Rare to find, and even rarer to distill, this Blanco was grown by the family for over two decades before harvest. The resulting distillate is a gem not to be missed.
