It was developed more than a half century ago, when company president, Bernard de Nonancourt, perfected a particular technique of Champagne maceration. Here, Pinot Noir grapes from carefully selected plots are sorted and destemmed before vatting. Maceration - lasting from 48 to 72 hours depending on the harvest - helps in extracting a deep color and fresh, fragrant berry aromas. This process makes it possible to obtain the richest and most subtle expression of Pinot Noir.
