To ensure the continuity of the Armagnac tradition, our eaux-de-vie are distilled only in our century-old Armagnac stills. The way they work has not changed, and requires years of practice so that the master distiller understands the specificity of each in order to get the best out of it. Trusting only his palate, he constantly adjusts the gas pressure and wine flow, which change depending on atmospheric pressure and temperature. He then initiates a real dialogue between himself and these stills, a dialogue which will give birth to the eaux-de-vie of Larressingle.
Tasting Notes,
Taste: Gold color, red highlights. Round and slightly woody on the nose. Some notes of candied fruit on the palate, then very clear vanilla notes.
Pairings: Its balance between fruit and wood brings out the iodine of crustaceans or shellfish.
