Vinified and aged without added SO2, 100% whole-cluster, ambient yeast fermentation and carbonic maceration in steel or wood tanks, minimal extraction by wetting the cap with buckets and 2-3 foot treads near the end of fermentation, no fining or filtration, less than 10 ppm SO2 added before bottling.
