Leaning into the vegetal notes of the variety, this batch offers a nose of pea sprouts and lightly burnt toast, the cheesy-nutty aroma of nutritional yeast, and a bit of damp sidewalk. On the palate, green beans and walnut shells roll loose among toasted coconut and toasted cinnamon, fennel seed, and dried apricot; like having a tropical cocktail while sitting in an herb garden.
