Mezcal produced in Miahuatlán, Oaxaca Maestro Mezcalero Maximino Nereo García Jarquín (son-in-law of Antonio Cortés Aragon) 100% Bicuishe (Agave karwinskii) Cooked in a conical earthen oven and crushed using a traditional stone tahona mill drawn by a bull (!) Fermented in open-air wooden tanks (tinas) Distilled twice using copper pot stills with hybrid refrescadera condenser This a distinct crowd pleaser; herbaceous and earthy yet fresh and green with subtle acidity and rounded angles, soft like the texture of wet clay 47% ABV (ABV may vary batch to batch) Piney and fibrous, this is a beautiful example of one of the many subspecies of Agave karwinskii found around Oaxaca, though Bicuishe is a term less frequently used in commercial productions outside the district of Miahuatlán. Though Antonio, La Medida’s original producer of Bicuishe, recently retired, his son-in-law is carrying on the family tradition. TASTING NOTES Piney and fibrous, this is a beautiful example of one of the many subspecies of Agave karwinskii found around Oaxaca, though Bicuishe is a term less frequently used in commercial productions outside the district of Miahuatlán. Distilled twice using an alembic copper pot still with refrescadera (condenser) by maestro Maximino Nereo García Jarquín (son-in-law of Antonio Cortés Aragon) in the renowned southern Oaxaca municipality of Miahuatlán, this a distinct crowd pleaser; herbaceous and earthy, yet fresh and green, with subtle acidity and rounded angles, soft like the texture of wet clay.
