What was that? Aquavit from Portland, Oregon? Wait!! I can explain. You see Christian Krogstadt, the distiller at House Spirits in Portland, is a second-generation American whose grandparents emigrated from Norway to the U.S. So he grew up drinking Aquavit. As a tribute to his heritage—and also because aquavit is delicious— Christian created his own version based on a traditional Scandinavian recipe. The nosing reveals and leads with anise, maybe some fennel, but definitely anise; it is sharp, clean and dry. The focus of the aroma is intriguing and inviting. The flavor is definitely caraway, toasted fresh Russian rye bread and background flavors of anise, which is a surprise because the anise was such the star in the nose. The finish is an iterate, delicate fade of the equipoised flavor with a lovely sapidity all the way through the lingering aftertaste. This aquavit is scrumptious, extraordinary and harmonious; try it chilled with big, bold foods or in an adventurous cocktail.
