The Knappogue Castle Cognac Cask Finish Series is a range of single malts finished in a variety of non-whiskey casks. Made exclusively from malted barley, distilled in copper pot stills, this expression is non-chill filtered and bottled at 92 proof.
Aromas: Orange zest, apricot, fresh grape & tropical notes with a hint of rose water and pastry.
Palate: Full-bodied, rich and fruity, with dried fruits, mango, apricot, orange blossom & vanilla. A splash of water will further open flavours and aromas.
Finish: Subtle ginger spice and a hint of oakiness.
The Barrels: The barrels come from the French region of Limousin. Oak from Limousin is medium and large grain, which mean it's more porous than other popular French cask oaks. It offers a pronounced flavor profile that's heavy on vanilla and rick in tannin, which helps in the maturation process and gives these barrels its distinct flavors.
