Born Gold Junmai Daiginjo Muroka has been a staple at Hi-Time for many years. This is a big Sake over-flowing with a nose of Honeydew Melon, Plum and Apple. On the palate there is more Honeydew Melon, followed by Strawberry and a hint of Banana. It is fruity, complex, rich and lightly sweet. The finish lasts for well over a minute. As this is milled down to 50%, that qualifies it as Daiginjo, which is premium Sake. Unlike many other sakes, Born Gold is non-charcoal filtered, which in the end means more flavor for the drinker. This sake has a light gold color after being aged for 1 year at 14 Degrees Fahrenheit. Because of its crisp acidity, it pairs wonderfully with whitefish carpaccio, cheese, and buttery pasta dishes. After being opened, and kept under refrigeration, this should last one week, and will taste drier. Born produces only junmai sake from premium rice sourced through local farmers and subsoil water from (approximately) 600 Feet below ground.
