This Champagne, which is a long-time staff favorite, is crafted by Angeline Templier, the granddaughter of Jules Lassale. Her Champagnes always go through malolactic and have at least three years of yeast aging before receiving their dosage, which runs between 7-9 g/L. Theses practices result in an easy drinking "Goldilocks" style of Champagne that appeals to both novice and Champagne geek alike. As Angeline says: "We make expressive, round wines with malolactic fermentations, rather than being all about minerality and salinity so we are traditional and don't want 1-2g/L of dosage. I am not having fun if I have a whole glass at [that dosage level]." "Cachet Or" is composed of 60% Meunier, 20% Pinot Noir and 20% Chardonnay grown by Angleine's mother Chantral on the family vineyards (average vine age is fifty years) in the Premier Cru village of Chigny-les-Roses.
