WINERY NOTES - The vines, from a wide diversity of mass selections, have the particularity of being planted at a high density of 14,000 vines per hectare which encourages competition between the vines. Olivier thus seeks to promote rooting in depth, in contact with the marl which will give the juice its mineral framework, but also to naturally limit yields and obtain smaller, expressive and concentrated grapes.
Tasting note: Firm reduction suppresses everything but a hint of petrol character. On the palate though there is good freshness and verve to the caressing and generous medium-bodied flavors that coat the mouth with dry extract, all wrapped in a mildly austere, lingering and sappy finale.
