This Savagnin cuvée is located on the La Baraque plot, which is planted with Chardonnay and Savagnin. The young vines of around ten Savagnin in this land of lilac marls produce this vintage, ouillée, that is to say non-oxidative of Savagnin. Its sharp acidity on the palate is the vital breath that Jean-François gives to each of his vintages. Its imposing material helps to calm this acidity. On the nose, aromas of green apples, flowers and flint are pleasant and confusing. This wine can be aged for many years as well as enjoyed young, with a cheese-based dish: try it with a fondue, the pairing, tested, is magical.
