History,
FARMING,
Our agaves originate from the heartland of tequila, known as Tequila Valley, in Jalisco, Mexico. We allow them to grow and mature for 6- 8 years before harvesting. The agave is sweet and mineral-rich, contributing significantly to Flecha Azul tequila's signature aromas and flavors.
HARVESTING,
Jimadores harvest fully mature agave from the lowlands of Jalisco. These agaves are hand-selected for their maturity and sweetness.
COOKING,
Once the agave is harvested and the “hearts” of the agave are exposed, they are cooked in traditional masonry ovens. The steam cooking process takes 48 hours: 24 hours of cooking and 24 hours of cooling.
EXTRACTION,
In the mill, the cooked agave is shredded and then squeezed several times to extract all the sweet juices from the pulp. Volcanic water is added to help in the extraction. The mineral-rich water enhances the agave's complex flavor.
FERMENTATION,
After extraction, the agave juices are introduced into open-air tanks where fermentation begins. We use a proprietary yeast cultivated since 1926, which brings out the bright, crisp flavor of our tequila blanco.
