Fermented in stainless steel for 10–12 days using Champagne yeast

Starchy and piquant aromas of taro root, fresh horseradish, jicama, and freshly julienned green apple lead to a high-toned palate of nopales underscored by candied peanuts. Sweet-tart candied hibiscus lands on a delightfully delayed finish.

The prickly pear is known in Mexico as tuna (ahem – be careful not to confuse it with the fish) and is, in fact, the fruit of the paddle cactus (Opuntia ficus-indica). Savory and juicy pink bulbs blossom at the tips of the cactus leaves; the fruit is popularly used in everything from salad to ice cream. Bright and boldly aromatic, Edenico’s prickly pear unquestionably stands out amongst the most unique eau-de-vie in the world.
