Fred Savart has run his faimily's Montagne de Reims estate since 2005 and has earned the the reputation as one of the area's top organic grower-producers. Savart noticed
noticed there were prime vineyards in Champagne that were not being adequately appreciated, so in 2014 he and a few friends developed the Éphémère project to promote these prime sites and create a small business out of it. This Éphémère cuvée is the result of the collaboration between Fréderic Savart and Drémont Père & Fils. Always very small production, and, as the name, Éphémère, suggests, each cuvée is a unique bottling that will never replicated. Their first cuvées were sold exclusively in France in 2019 but now, we have finally been able to get our hands on a few cases of Savart's Éphémère 018.
Based on the warm and sunny 2018 vintage, this Champagne is composed entirely of old-vine Grand Cru fruit. It is blend of 74% Chardonnay (from Cramant, Mesnil-sur-Oger, Avize, and Oger) with 24% Pinot Noir taken from Bouzy and Ambonnay. The resulting vin clair goes through a slow second fermentation, before ageing under cork over a lengthy 5 year period. A judicious dosage of just 3 g/l is then added to keep the acidity in balance, providing a delicious drinking experience from the get-go.
