Oeil de Perdrix, or “eye of the partridge,” is an all but forgotten style in Champagne. Perhaps the best explanation is to call it a grey wine, as it’s made from both red and white grape varieties but is neither properly white in the glass, nor fully pink. From Doyard’s cellar, this wine emerges as an ideal match to be served with alongside a proper feast. There’s less emphasis on the fizz, and more on the actual character of the wine. It captures a delicious balance of the fruity and fresh flavors of peaches, rose-hips and candied citrus with grounding savory, herbaceous and gamey layer. Superb!
