This Pinot Grigio was made using extended skin contact. The result is what's known in Italy as "Ramato", translated to "auburn" or "copper". This wine shows lovely notes of sun tea, quince paste, hibiscus, peach pit, and herb blossom. The palate has great balance and depth, a mineral driven tactile nuance which suggests orchard fruit skin and presents a slight chalky texture.
ANTONIO GALLONI 92 POINTS - "The 2020 This Time Tomorrow is Pinot Grigio fermented in the skins for eight months and then aged in a combination of sandstone amphora and 400-liter barrels, a sort of Santa Barbara version of 'ramato'. Wild and exotic, the 2020 offers up a beguiling melange of blood orange, kirsch, orchard fruit and cinnamon. This Time Tomorrow is an eccentric wine, that much is obvious, but it is absolutely compelling, not to mention incredibly delicious."
