DATE SEVEN is a collaborative project from seven sake breweries of Miyagi Prefecture: Hakurakusei, Urakasumi, Katsuyama, Suminoe, Yamawa, Koganesawa and Hagi no Tsuru. They assemble each year to make a limited release sake of excellent quality. For "Season II, Episode 3" Suminoe is in the lead with other brewers each handling a different step of the process.
