Physically imposing and rare to find in cultivation around Oaxaca, Cirial is one of the largest of the Agave karwinskii subspecies. Carlos and Margarita produce a particularly balanced and subtly nuanced example, walking a tightrope between delicate fruits, earthy smoke, dried herbs, and tea leaves.
