100% Sangiovese Predappio
The local type of Sangiovese is called Sagioveto dal Cannello Piccolo Predappio, which North Berkeley Imports describes as having "...a luminous, suave and spiced character, redolent of cherry blossom and smoky incense." It mixes juicy and savory as Sangiovese can do so well, but is distinct in its purple and black tones of earthy fruit. The fine coating of tannins grips the palate, and the acidity is elegantly tucked in, providing an inner citrusy vibrancy. This makes it ideal for cutting through hearty pizzas, stuffed pastas and ragu' alla bolognese.
Fermented and aged in a mix of stainless steel and Slavonian oak casks. Destemmed but not crushed (whole berries).
