Since the post-WWII period, wines have routinely been aged for 15-25 years before release, much longer than is the standard.
All aging takes place in concrete vats. No oak is used. Although Gilette was not included in the 1855 classification, its wines can compete with the best. Château Gilette is unique not only in Sauternes but in the world, as wines are aged between 15 and 25 years before release.
The wine develops fantastic amber nuances due to its age. On the palate, it displays a rare creaminess with aromas of citrus fruits and honey.
