Winemaker Notes -
A single lieu-dit on the Chaume hill, facing south. Plaisance owns the only red grapes on the Chaume hill. Lots of millerandage in this vineyard. 35+ year old vines. Spilite over schist bedrock. De-stemmed. Three week maceration. Indigenous yeast. Aged in 2-3 year old barrels for 11 months.
To be enjoyed with friends with some spicy tapas, a grilled lomo from the Basque country.?
Blend: 70% Cabernet Sauvignon, 30% Cabernet Franc
