History,
This is a very complex herbal liqueur, which comes from France. The herbs in this liqueur include fresh and dried thyme, fresh and dried mint, vanilla beans, and cinchona bark. It is clear in color, with a sharp, sweet taste and a rich aroma.
Tasting Notes,
Nose: fine, precise. Ashes and (lime) lemon accompany notes of smoke and peat. The latter appears vegetal and herbaceous, rather dry. It evolves on grapefruit (yellow), licorice and barley during fermentation. Rubber and tar are also present (with delicacy).
Palate: rich, creamy. Much oilier than the nose would suggest, it appears iodized and salty. Much more present, the peat gives it impetus. In fact, it wins in everything: in finesse, in density, in thickness. Notes of licorice stick and smoked fish make you salivate. Stunning.
Finish: relaxed, surprisingly serene for its age. Like an old sea dog, she watches the ocean with a pipe in her mouth. Pulp, juicy with notes of ripe pear, it lingers on the “four-leaf” clover, it goes without saying.
