The Tuscan project dates to 2001 when Giorgio Rivetti acquired 160 acres near Pisa. There is no Merlot or Cab planted on the estate and no “Super Tuscan” planned for the future. Giorgio Rivetti’s ambitions are to lower yields, constantly improve the farming, and bring to light the character of regional varieties without international style blending.
Malolactic fermentation in used (2nd and 3rd passage) French oak barrels, followed by 12 months of aging.
