Despite an abv of around 15%, the "Paolina" Barbera is bold without being heavy, delivering a surge of vibrantly juicy dark cherries in alcohol and a soft, stony minerality. An herbal tinge like sage and a lightly rich, almondy tone in the background give a classic Italian counterpoint to the fruit. After quickly building in richness on the palate, the juicy acidity and fine-grained grip rein it in for a dry, lightly mineral finish, enlivened by the echoes of that herb-tinged, sun-kissed fruit. It really revs up the appetite for moderately-aged sheep or goat cheeses, mortadella & smoky speck, hearty pizzas (sausage and mushroom) and stuffed pastas with tomato sauce! Try it at a cool 63F.
