We are featuring this Champagne today for a couple of very good reasons. The first is that it is flat-out delicious, low-dosage Champagne that is perfect for summer (though we must confess we enjoy it year-round-- but it just stands out so clean and crisp during the Dog Days!). The second is that a price increase is coming soon and we wanted to give you a chance to grab some bottles before that occurs (even with the upcoming price change it still will be way worth the price of admission!).
This bottling is a very personal interpretation of the Champagne region filtered through the inimitable style of Bruno Paillard. They draw from 35 of the 320 crus of Champagne and it is considered the flagship of the house style-- it's a Multi Vintage (MV) wine that's blended with a fairly high proportion of reserve wines (35%) made from solera-style system dating back to 1985! The grapes for the Cuvée contain 45% Pinot Noir, 33% Chardonnay and 22% Pinot Meunier. Exclusively made from the first pressings, this Prèmiere Cuvée is kept three years on lees before being aged another six months post disgorgement. Extra-Brut means the dosage is kept below 6 g/l to preserve the purity of the wine.
The nose well reflects the different crus and grapes that make up this wine. Notes of lime and lemon citrus are joined by scents of sourdough brioche, apple and a layer of darker berries, cherries and raspberries, with echoes of carob and a soupçon of nutmeg.
The palate reiterates much of what the nose promised, with tastes of citrus (lime, grapefruit) that seamlessly meld with darker berries, toasted bread and a hint of plum. The finish is lengthy and adds a touch of salinity and pear. Just wow! The acidity is present from the get-go and allows the riper flavors to have their moment in the sun (so to say) without letting them run rampant and become cloying.
Pair with cheese (Brie de Meaux, Camembert, Langres-- all 3 are in stock!), poultry, shellfish. We also love Champagne with buttered popcorn (try it!) for a lighter snack.
DECANTER 92 POINTS - "A whiff of flint precedes fresh lemon notes that pervade the entire wine with vivid freshness. The palate is taut and bright, with a rather salty, iodine savoriness. Lovely depth from the great proportion of reserve wines. The finish is brisk, with citrus and umami."
