Hi-Time's Top Sakes of 2024
Go Big or Go Home! This is the first time we are offering a Sake in Magnum in our Newsletter, only because it is an absolute DEAL and something you should not miss, especially for holiday gatherings. You normally will only find this in 720ml bottles, but Hi-Time has special-ordered this exclusive bottling just for you! We visited the Born Sake Brewery (Katoukichibee Shouten) this year in Fukui Prefecture, and met with 11th Generation President and CEO, Atsuhide Kato, and were impressed by the attention to quality and care they put in their Sakes.
Born Gold Born Muroka Junmai Daiginjo, has been a staple at Hi-Time for many years. This is a sake overflowing with a nose of honeydew melon, plum and apple. On the palate there is more honeydew melon, followed by strawberry and a hint of banana. It is fruity, complex, rich and lightly sweet. The finish lasts for well over a minute. Special Yamada Nishiki rice coming from Hyogo Prefecture's Special A -Grade Area is milled down to 50%, making it "Daiginjo" premium Sake. The purpose of the milling is to shave away any impurities, getting to the "heart" (or "shinpaku") of the rice grain. Further setting Born Gold apart from the rest, this sake is non-charcoal filtered (Muroka), which in the end means more flavor for the drinker. This sake has a light gold color after being aged for 1 year at 14 degrees Fahrenheit. Born produces only junmai sake from premium rice sourced through local farmers and subsoil water from (approximately) 600 feet below ground. This Sake pairs wonderfully with fish, cheese and creamy pasta dishes. After being opened, and kept under refrigeration, this should last approximately one week, and will taste drier.
